Mother’s Day Cranberry & Pistachio Muesli Slice by Kate Bond

‘Mum’s Muesli Slice’
Ingredients
(makes 30)
125g butter, chopped coarsely
1/3 cup (75g) firmly packed brown sugar
2 tablespoons honey
11/2 cups (135g) rolled oats
1/2 cup (75g) self-raising flour
1 cup (130g) dried cranberries
1 cup (140g) roasted pistachios, chopped coarsely
Method
1. Preheat oven 10 180°C/ 160°C fan-forced. Grease 20cm x 30cm lamington pan; line base with baking paper, extending paper 2cm over long sides.
2. Stir butter, sugar and honey in medium saucepan over medium heat without boiling until sugar is dissolved. Stir in remaining ingredients. Press mixture firmly into pan.
3. Bake slice about 20 minutes. Cool in pan before cutting.
